Dumplings, Vareniki, and Manti have long conquered the hearts of millions, but what unites them, and what makes them unique? In this article, we won’t argue about which is tastier. Instead, we will take a small journey through culinary traditions and tell their stories.
Pelmeni: The Taiga Ration
The name «Pelmeni» originates from the Finno-Ugric words «pel» (ear) and «nyan» (bread). The dish entered Slavic cuisine via the peoples of the Kama region and the Urals and later established itself in Siberia.
For Siberian hunters and pioneers, pelmeni were the perfect concentrate: frozen meat in dough could be stored all winter without spoiling and was quickly prepared over a campfire. The traditional filling consisted of a mixture of beef, pork, and sometimes elk meat.
Vareniki: Heritage of the South
The prototype of vareniki is the Turkish dish dushvara. Slavic peoples adopted the recipe, changed the filling to one more familiar for the region, and simplified the shape.
Unlike the rugged northern pelmeni, vareniki became a symbol of the prosperity of southern agrarian regions. Due to the availability of vegetables, fruits, and dairy products, fillings began to include potatoes, stewed cabbage, cottage cheese, or cherries. Vareniki were often prepared as a festive dish or during fasts when meat was prohibited.
Manti: Heritage of the Silk Road
The homeland of manti is Central Asia and China. This is a dish of nomads and traders who traveled in caravans. The name itself is consonant with the Chinese «mantou», which originally meant «edible head» (due to their large size).
Manti have always been considered a collective food. They were folded by the whole family for big holidays or when receiving guests. The main technological feature - the use of steam instead of boiling in water - allowed the juice of the chopped meat to be preserved inside, even if the dough was rolled very thin.
Why Are They So Different?
One might think - it’s just dough and more dough. However, the difference is substantial - from the dough to the filling and the shape.
Dough
- Pelmeni. The dough must be dense and elastic. Its task is to withstand the aggressive boiling of water without tearing, preserving the meat concentrate inside.
- Vareniki. Here, the dough is more moist and pliable. Since the filling is often already cooked (potatoes, cottage cheese), the dough only needs to set slightly while remaining tender.
- Manti. The dough is rolled almost to transparency but must be strong. It acts like a steamer dome, holding in hot steam and a lot of juice.
Filling
- Pelmeni. Traditionally, they are made with finely ground minced meat. This creates a uniform, dense meat texture that cooks quickly in boiling water.
- Vareniki. Emphasis is on chunks and structure: the texture of mushrooms, grains of cottage cheese, or whole berries.
- Manti. Only chopped meat. This is the secret of the real taste: large pieces of meat and plenty of onions create a natural broth inside. That is why we put only chopped meat in Frostix manti.
Shape
- The round «ear» of the pelmen allows it to cook evenly from all sides.
- The varenik crescent with a wide seam is the ideal construction for soft and sweet fillings.
- The complex knot of the mant is almost an engineering solution. Small holes are left at the top, or airtight seals are created, allowing hot air to circulate inside and turn the filling into a delicate soufflé in its own juice.
Technology
This is where the main difference lies.
- Boiling (pelmeni, vareniki). Water transfers heat quickly. This is the ideal environment for dense dough, which instantly seals the filling.
- Steam (manti). A more gentle mode. Steam does not wash away the flavor but delicately simmers the chopped meat. If you decide to boil manti in water, they will likely lose their main value - the rich internal broth.

Serving Culture
Proper serving is a way to emphasize the texture and the true expressiveness of the taste.
Pelmeni
- Sauces. Butter is the base. Vinegar, mustard, or horseradish add the necessary acidity and spice.
- How to eat. With a spoon or fork. If there is a bit of broth inside, a spoon is preferable.
- Drinks. Cold kvass, cranberry mors, or tomato juice with salt and pepper.
Vareniki
- For savory ones. The ideal companion is fried onions in vegetable oil or cracklings. This adds crunch to the soft dough.
- For sweet ones. Thick sour cream, honey, or berry syrup.
- Serving secret. Lay vareniki in a single layer or in a wide bowl, greasing them liberally with oil immediately after boiling.
Manti
- Why by hand? If you pierce a mant with a fork, the precious juice will leak onto the plate. Hold the mant by the knot, take a careful bite, and drink the broth.
- Sauces. Sour cream with garlic and cilantro. For those who like it spicy - oil heated with red pepper (laza-karo).
- Presentation. Only on a large, shared platter. Manti are a symbol of community; they are not typically served in individual portions.
